Today was our first &#8220;frosty&#8221; day in Eastern Washington. No, that doesn&#8217;t mean I started the day with a trip to Wendy&#8217;s, (although that&#8217;s not a terrible idea) but it was cold enough that the rooftops had frost on them! It inspired me to make something Fall-like and that means&#8230;pumpkin!<\/p>\n<p>I haven&#8217;t taken pictures but they turned out fantastic! They fluffed up nicely but not too much, and the texture was smooth and amazing. The recipe originated from: <a href=\"http:\/\/www.highheelsandgrills.com\/2012\/09\/pumpkin-pancakes.html\">High Heels &amp; Grills<\/a>\u00a0and they had their own photo which I will share below. I topped mine with butter and sugar-free syrup instead of whipped cream, but if you want it to taste even more like a treat, go for it!
